PANTRY MEAL— Tomato Quinoa and Chicken
This was a quick pantry meal that Francesca and I made last night. Using up the food that is in the house saves not only money, but the planet.
When putting together a meal think about having a complete protein. Did you know that quinoa is a complete protein?! We had a little bit of chicken to use up so we added that. Francesca ended up adding seasonings to the chicken that made it taste delicious--smoked garlic powder, cumin, chili powder, and the seasoning salt.
I prefer fresh vegetables but it’s always good to have cans rotating in your food storage. Which means you need to use your food storage to keep it fresh.
I cooked the last little bit of quinoa in the diced tomatoes, adding enough water for the amount I was making. Unless quinoa has been pre-rinsed, make sure to rinse it to takeoff any bitterness. The bitterness keeps the birds from eating the seeds. At the end of cooking I added a few drops of the doTerra Mexican culinary blend.
If you are serving several people, take the time to plate the food so that way it is dished up evenly, bonus if you can make it look nicely on the plates. That is why I added the green canned vegetable.
